
Watermelon Feta Salad
Juicy watermelon, salty feta, and fresh mint come together in a salad that's cooling, bright, and ready in minutes.
Ingredients
- 8 cupsseedless watermelon(cut into 1-inch cubes, about half a medium melon)
- 6 ozfeta cheese(block-style, crumbled into large chunks)
- ½ mediumred onion(very thinly sliced)
- ½ cupfresh mint leaves(torn if large)
- 1 tbspextra-virgin olive oil
- 1 tbspfresh lime juice(about 1 lime)
- ¼ tspflaky sea salt
- ¼ tspblack pepper(freshly cracked)
Method

Soak the thinly sliced red onion in cold water for 10 minutes to mellow its sharpness, then drain and pat dry.

Arrange the 8 cups watermelon cubes in a single, slightly overlapping layer on a large serving platter.

Scatter the drained red onion evenly over the watermelon.

Crumble the 6 oz feta cheese in large, rustic chunks over the top — uneven pieces give better texture than fine crumbles.

Scatter the ½ cup fresh mint leaves across the salad.

Drizzle the 1 tbsp olive oil and 1 tbsp lime juice evenly over everything.

Finish with the ¼ tsp flaky sea salt and ¼ tsp black pepper. Serve immediately.
