- 8 cups seedless watermelon (cut into 1-inch cubes, about half a medium melon)

- ½ cup fresh mint leaves (torn if large)
- 1 tbsp extra-virgin olive oil
- 1 tbsp fresh lime juice (about 1 lime)
- ¼ tsp flaky sea salt
- ¼ tsp black pepper (freshly cracked)

## Instructions

1. Soak the thinly sliced red onion in cold water for 10 minutes to mellow its sharpness, then drain and pat dry.
2. Arrange the 8 cups watermelon cubes in a single, slightly overlapping layer on a large serving platter.
3. Scatter the drained red onion evenly over the watermelon.
4. Crumble the 6 oz feta cheese in large, rustic chunks over the top — uneven pieces give better texture than fine crumbles.
5. Scatter the 0.5 cup fresh mint leaves across the salad.
6. Drizzle the 1 tbsp olive oil and 1 tbsp lime juice evenly over everything.
