# Logan's Cucumbers

Crisp cucumber slices soaked in a tangy, sweet-and-savory vinegar brine. A Southern staple that gets better the longer it sits.

## Ingredients

- 3 large cucumbers (peeled if waxed, thinly sliced)
- 1 medium white onion (thinly sliced into rings)
- 1 tsp salt
- ¾ cup white vinegar
- ¼ cup water
- 3 tbsp granulated sugar
- ½ tsp black pepper (freshly ground)
- ¼ tsp garlic powder
- ¼ tsp dried dill (optional)

## Instructions

1. Slice the 3 large cucumbers into rounds about 1/8-inch thick and place them in a large bowl.
2. Add the 1 medium white onion rings to the bowl with the cucumbers.
3. Sprinkle the 1 tsp salt over the cucumbers and onions, toss to coat, and let sit for 10 minutes — this draws out excess moisture so the brine stays sharp.
4. While the vegetables rest, whisk together the 0.75 cup white vinegar, 0.25 cup water, and 3 tbsp granulated sugar in a small bowl until the sugar fully dissolves.
5. Stir in the 0.5 tsp black pepper, 0.25 tsp garlic powder, and 0.25 tsp dried dill into the brine.
6. Pat the cucumbers and onions dry with paper towels to remove the drawn-out liquid, then return them to the bowl.
7. Pour the brine over the cucumbers and onions, tossing well to coat every slice.
8. Cover the bowl and refrigerate for at least 1 hour before serving, tossing once halfway through. Serve cold, straight from the bowl.

## Tip

> Slice the cucumbers as uniformly thin as possible — a mandoline set to 1/8 inch gives every slice the same brine-to-crunch ratio and keeps the texture consistent throughout the bowl.
