## Ingredients

- 1 cup honey (mild variety like clover or wildflower)
- 2 tbsp red pepper flakes
- 1 tbsp apple cider vinegar
- 1 pinch kosher salt

## Instructions

1. Combine the 1 cup honey and 2 tbsp red pepper flakes in a small saucepan over low heat.
2. Warm the mixture, stirring occasionally, until the honey is loose and just beginning to bubble at the edges — about 3 to 4 minutes. Do not let it boil.
3. Remove from heat and stir in the 1 tbsp apple cider vinegar and 1 pinch kosher salt.
4. Let the honey steep for 5 minutes so the pepper flakes fully infuse their heat.
5. Taste and add more red pepper flakes if you want a sharper bite, then strain through a fine-mesh sieve into a clean jar — or leave the flakes in for extra texture and heat.
6. Cool completely before sealing. Store at room temperature for up to 1 month.

## Tip

> Keeping the heat low is the key move — honey scorches fast and turns bitter above a gentle simmer. If the honey starts to foam aggressively, pull it off the burner immediately.
