# Guacamole

Creamy, chunky, and bright with lime — the kind of guacamole that disappears before you've finished setting out the chips.

## Ingredients

- 3 large ripe avocados
- 2 tbsp fresh lime juice (about 1 lime)
- ½ tsp kosher salt (plus more to taste)
- ¼ small white onion (finely diced)
- 1 jalapeño (seeded and minced)
- 2 tbsp fresh cilantro (roughly chopped)
- 1 clove garlic (minced)
- ¼ tsp ground cumin

## Instructions

1. Halve and pit the 3 large ripe avocados. Scoop the flesh into a medium bowl.
2. Add the 2 tbsp fresh lime juice and 0.5 tsp kosher salt. Mash with a fork to your preferred texture — leave some chunks for body.
3. Fold in the 0.25 small white onion, 1 jalapeño, 1 clove garlic, 2 tbsp fresh cilantro, and 0.25 tsp ground cumin.
4. Taste and adjust salt and lime juice as needed. Serve immediately, or press plastic wrap directly onto the surface and refrigerate for up to 2 hours.

## Tip

> Mash the avocado with the lime juice and salt first, before adding anything else — the acid coats the flesh immediately and slows browning while you prep the remaining ingredients.
