
Easiest Sheet Pan Tacos
Seasoned ground beef and peppers roasted on one pan, then scooped straight into warm tortillas. Weeknight dinner done in 30 minutes.
Ingredients
- 1 ½ lbground beef(80/20 for best flavor)
- 1 mediumyellow onion(diced)
- 1 largered bell pepper(diced)
- 1 largegreen bell pepper(diced)
- 2 tbspolive oil
- 2 tspchili powder
- 1 tspground cumin
- 1 tspgarlic powder
- ½ tspsmoked paprika
- ½ tspkosher salt
- ¼ tspblack pepper
- 8small flour tortillas(or corn tortillas)
- 1 cupshredded Mexican cheese blend
- ½ cupsour cream(for serving)
- ½ cupfresh salsa(for serving)
- ¼ cupfresh cilantro(roughly chopped, for serving)
- 1 mediumlime(cut into wedges, for serving)

Preheat the oven to 425°F and line a large rimmed sheet pan with foil for easy cleanup.

In a small bowl, combine the 2 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, ½ tsp smoked paprika, ½ tsp kosher salt, and ¼ tsp black pepper to make the spice blend.

Spread the 1 ½ lb ground beef onto the sheet pan and break it into rough crumbles with your hands or a spatula — no need to brown it first.

Scatter the diced yellow onion and both diced bell peppers evenly over and around the beef.

Drizzle the 2 tbsp olive oil over everything, then sprinkle the spice blend on top. Toss lightly with a spatula to coat.

Roast on the center rack for 15 minutes, then use a spatula to break up the beef further and stir everything together.

Sprinkle the 1 cup shredded Mexican cheese blend evenly over the pan and return to the oven for 3–5 minutes, until the cheese is melted and the beef is cooked through.

While the pan is in the oven, warm the 8 flour tortillas directly over a gas burner for 20 seconds per side, or wrap them in a damp paper towel and microwave for 45 seconds.

Remove the pan from the oven and squeeze half the lime wedges over the filling. Scoop the beef mixture into the warm tortillas and top with sour cream, fresh salsa, and cilantro. Serve with remaining lime wedges.
