## Instructions

1. Preheat the oven to 425°F and place a wire rack on a rimmed baking sheet. Brush or spray the rack lightly with oil.
2. Pat the 1.5 lb chicken tenders dry with paper towels, then season all over with 1 tsp kosher salt and 0.5 tsp black pepper.
3. Set up a three-bowl dredging station: place the 0.5 cup all-purpose flour in the first bowl; whisk the 2 large eggs with 1 tbsp whole milk in the second; combine the 1 cup panko breadcrumbs, 1.5 tsp ground turmeric, 1 tsp garlic powder, 0.5 tsp smoked paprika, and 0.25 tsp cayenne pepper in the third.
4. Working one at a time, dredge each chicken tender in the flour and shake off the excess, then dip fully into the egg wash, letting any drip off, then press firmly into the spiced panko so the crumbs adhere on all sides.
