# Avocado Toast

Creamy mashed avocado on crisp toasted bread, finished with flaky salt and a squeeze of lemon. Ready in under 10 minutes.

## Ingredients

- 2 large slices sourdough or thick-cut bread
- 2 ripe avocados (halved and pitted)
- 1 tbsp fresh lemon juice
- 1 pinch kosher salt
- 1 pinch black pepper (freshly ground)
- ¼ tsp red pepper flakes (optional)
- ½ tsp flaky sea salt (such as Maldon, for finishing)

## Instructions

1. Toast the 2 large slices of sourdough bread until deep golden and crisp all the way through — a pale toast will go soggy under the avocado.
2. Scoop the flesh of the 2 ripe avocados into a bowl. Add the 1 tbsp fresh lemon juice, 1 pinch kosher salt, and 1 pinch black pepper.
3. Mash with a fork to your preferred texture — a few lumps give better body than a completely smooth paste.
4. Taste and adjust salt or lemon juice as needed before spreading.
5. Divide the mashed avocado evenly between the 2 toasted slices and spread to the edges.
6. Finish each slice with a pinch of flaky sea salt and the 0.25 tsp red pepper flakes if using. Serve immediately.

## Tip

> Mash the avocado directly in its skin with a fork, then scoop — it keeps the mixture contained and reduces cleanup. The lemon juice does double duty: it brightens the flavor and slows browning if you're not eating right away.
