# Apple Crisp

Tender spiced apples under a buttery oat topping that bakes up golden and crunchy. The kind of dessert that fills the kitchen with the smell of autumn.

## Ingredients

- 6 medium apples (Granny Smith or Honeycrisp, peeled, cored, and sliced ¼-inch thick)
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon (divided)
- 1 tbsp lemon juice
- 1 cup old-fashioned rolled oats
- ½ cup all-purpose flour
- ½ cup packed brown sugar
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 6 tbsp unsalted butter (cold, cut into small cubes)

## Instructions

1. Preheat the oven to 350°F (175°C). Lightly butter an 8×8-inch or similar 2-quart baking dish.
2. Toss the sliced 6 medium apples with the 2 tbsp granulated sugar, ½ tsp of the ground cinnamon, and 1 tbsp lemon juice until evenly coated.
3. Spread the apple mixture in an even layer in the prepared baking dish.
4. In a medium bowl, combine the 1 cup rolled oats, ½ cup all-purpose flour, ½ cup packed brown sugar, remaining ½ tsp ground cinnamon, ¼ tsp ground nutmeg, and ¼ tsp salt. Stir to mix.
5. Add the 6 tbsp cold butter cubes to the oat mixture. Use your fingertips to work the butter in until the mixture resembles coarse, clumpy crumbs with pea-sized pieces of butter still visible.
6. Scatter the topping evenly over the apples, covering them completely edge to edge.
7. Bake for 40–45 minutes, until the topping is deep golden brown and the apple juices are bubbling up around the edges.
8. Let the crisp rest for at least 10 minutes before serving so the juices thicken slightly.

## Tip

> Keep the butter cold right up until you work it in — warm butter blends in too smoothly and you lose the coarse, craggy texture that makes the topping shatter when you spoon into it.
